Vegan Mashed Sweet Potatoes With Marshmallows
( serves: 4-6 Servings )
Prep Time: 15 Minutes
Cook Time: 45-55 Minutes


- 6-8 sweet potatoes

- 3 tbsp of Earth Balance vegan butter

- 1/4 of vegan creamer or soy milk

- 3 tbsp brown sugar

- 1/2 tsp salt

- 1 tsp pumpkin pie spice

- 1 package vegan marshmallows (we use Dandie's)


- Preheat oven to 400 degrees.

- Place sweet potatoes on baking sheet and pierce each one with a knife. Cook 45 minutes or longer until potatoes are soft.

- Take out of oven to cool a bit, then peel the skins off of the potatoes and put the insides of the potatoes in a bowl. Mash potatoes and add the rest of the ingredients minus the marshmallows.

- Using an electric mixer (or hand mixer) beat until smooth and creamy. Always make sure to taste as you go.

- Pour mixture in a greased baking dish. Line the top with the marshmallows. Place under a broiler until marshmallows brown.
